Eat the Rainbow!

I learned two really amazing nutrition lessons from my mom:

1) Eat the rainbow

2) Enjoy anything in moderation

Also, never scrimp on toilet paper, but that is a side bar :)

These are lessons that I learned years ago that have really stuck and continue to influence my current eating habits. Do you follow those guidelines or is your plate all brown?

Need some new ideas for veggies to help you eat the rainbow? Ive bolded my faves!

RED: Beets, Tomatoes, Red Cabbage, Red Pepper, Red Onion, Red Leaf Lettuce

ORANGE/YELLOW: Orange Pepper, Acorn Squash, Yellow Pepper, Carrots, Butternut Squash, Carrots, Pumpkin, Summer Squash.

GREEN: Green Beans, Kale, Arugula, Brussel Sprouts, Green Peppers, Asparagus, Chard, Spinach

Cucumbers, Snap Peas

PURPLE: (who knew!?) Purple Cabbage, Purple Asparagus, Purple Cauliflower

Can you get 4-6 servings of veggies every day? Eating the rainbow?
